I've always wondered why people are fat/obese in prison? Of course, they might show up fat/obese, but they should lose weight over time. Why are we feeding prisoners so much food?

Why are we feeding prisoners so much food? Depends on the prison and the rules. The meals are generally not low fat and low carb. And a prisoner that doesn't exercise and has access to snacks like candy and chips can actually gain weight.

I correspond to a former student in a federal prison in Lexington, Ky.  She said there is no access to candy like chocolate...in fact she can't wait to get out and have a piece of chocolate. Not sure about the snacks.
