Sounds delicious! Son cooked something similar last week.
Don't you hate cleaning the cast iron though?

Got a boston butt soaking in a brine right now; going in the smoker at 2 AM.

Rox will probably think this is cooking heresy, but we love a Boston Butt with a dry rub and slow cooked in a crock pot. I love it smoked also, but it's very juicy done in a crock pot....

I have made plenty of pork loins and pork tenderloins in the crockpot, with excellent results. Getting a 9 lb boston butt in one though...takes a huge crockpot! I'm sure it will be good. I typically brine, then rub down with olive oil and spicy brown mustard before rubbing in the other spices. I do inject with some cider and vinegar though.

Grilled some BBQ chicken and summer sausage last night on the charcoal Weber. Came out perfect.

The smoked ribs turned out fantastic. I trimmed the top of the spare ribs to make St. Louis style and grilled the rib-tips separately. Got some good leftovers!!

Hosting about 20 people Thursday for the 4th. Smoking a 9 lb boston butt and grilling plenty of bahamma mammas from Schmidt's, burgers, and hot dogs. Making my spicy sausage queso dip as an app. Then doing a big pot of green beans & potatoes, macoroni salad, potato salad, baked beans, cheesy potatoes, and 7 layer salad. My wife's birthday is the 3rd, so getting a big ice cream cake from DQ and she is also making brownies.
Going to make some sort of punch to drink, or even sangria.
