How do you cook the skirt steak? tried it on the grill a number of times, but can't get it tender enough for my liking.

Yes, I like that.

Been having trouble finding good vidalia onions which are REAL ones.  The flat ones that are sweet have been difficult to find.

So we celebrated Father's Day last night. Instead of going in and out I wanted to grill. Better food, cheaper NEIPAs. Grilled 2 ribeyes bone in. Two fillets. 2 tuna steaks. Pound of scallops. The above less Italian seasoning and brown sugar marinade. Garlic butter drizzle after. Filets salt pepper and garlic only. Ribeyes a Cajun rub. Lemon dill on tuna steaks. It ends up being like a Brazilian restaurant as I cut everything and then serve.

If you marinade the skirt steak and cut it against the grain, you'll have no problems getting it tender.

What I use for a grainy type of meat like skirt steak, flank steak, etc., is to make sure the marinade has an oil, I use olive oil or you can use vegetable/canola. Then season it like you want it to taste. Pineapple juice for a tropical taste, or I use about 1/4 cup maple syrup, not pancake syrup. Put a little garlic, ginger, pepper and a little soy sauce 2-3 TBL. let it marinate for about 4-5 hours and grill it. Don't over cook it. It will be delicious.

speaking of garlic, roasted garlic served with some French bread as a spread is fantastic with steaks or as an appetizer.
